This morning after a 45 minute workout I wanted something good but not heavy. I needed something high in protein, omega fats (but no bad fats) and gluten free. My solution to the problem: Red Bean Patties. This is a recipe I put together in an instance. It contain cooked red beans, cooked brown rice, milled flax seeds, EVOO, diced jalapeño and water, I mixed all of this in a food processor while the pan was heating with a little olive oil. Depending on how you plan to eat or several will depend on the size. As you will see I made the patties in several sizes because at first I was thinking burger. I pulled out the homemade cocktail sauce and the fresh shredded horseradish just for a try. BTW – if you get a chance trying making your own sauce. There will be no corn or soy oil in it and it will be all the better for you. Back to the patties, I tried both sauces and decided the freshly made horseradish was so much better. And this also gave me an inspiration of how great these will be as an appetizer.

I almost forgot. I dropped these in the pan using two spoons. And then I flatten them when I turned to cook the other side. No need to shape like burgers. The odd shapes add to the enjoyment of this tasty treat.
