A long winter night soup:

Here is a hardy but easy soup made with a few precooked foods and some fresh veggies. The list of precooked foods is oven roasted acorn squash and cauliflower, kale, red beans, brown rice, and chicken (or turkey). I placed the squash, cauliflower, mushrooms, bell and jalapeño peppers in a pot with EVOO and seared.  Once the searing is done I tossed in ten (10) cherry tomatoes and seasoning. With a small hand held appliance I pureed this mixture directly in the pot. Not too mushy because you want some texture. After this was done I added the kale, red beans, rice and chicken. Once this comes to a boiled I added chicken broth (or veggie broth, as much as you like) to the pot and allowed this to simmer. My favorite seasonings are the usual suspects along with turmeric, dried ginger, pepper flakes and coriander to name a few. I will tell you about my spice blend later.
