Blueberry Cheese Cake with Blueberry Topping

Where is my next project, a chocolate cookie crusted blueberry cheese cake for Christmas dessert?  I use coriander and Dutch cocoa cookies in the crust, sour cream, blueberry pie filling and Neufchatel cheese for the filling.  I guess to some this is not a true cheese cake but you get to have a little more.  This was my Christmas offering to my niece.  I have not made a cheese cake in years and had forgotten how easy and fun this could be.

  •  Crumble the cookies with butter and raw sugar to make the crust. After the crust is formed in a spring pan, place in the fridge for ten to twenty minutes.
  • Mix the Neufchatel, sour cream, eggs and vanilla in a heavy mixer.  Swirl in the blueberry pie filling (make sure you are using a really good filling).  Pour batter over the cookie crust and bake in a 350 preheated oven.

***  Here is another great idea for dessert.  Use half the amount of cream cheese and ¼ cup more of sour cream.  Mix all the ingredients using the same method for the cheese cake and a slightly thinner crust and now you have a wonderful tart.  TMO  🙂
