So tasty. Quick, filling and oh so good.

Although I labeled this as rice pasta you can use the pasta of your preference. I am not allowed wheat and I find this pasta works well for me.
Use one box of penne pasta, sea salt, seasoned oil (we will talk about this later), red or black beans, sun dried tomatoes, red or green bell pepper, mushrooms, mustard, homemade mayo and raw spinach.

Cook your pasta using a lot of sea salt for the boiling water. While the pasta is cooking, chop the sun dried tomato, two medium size mushrooms, ½ bell pepper, cooked beans (please use fresh cooked, nothing from the can). Mix in a large bowl ¼ – ½ cup of seasoned oil and mustard and the remaining ingredients except the spinach. When the pasta is done tear up the raw spinach and add to the pasta. This will wilt the spinach and add additional brightness to its color. I use the amount of spinach that makes me happy. Now we will mix everything together and, at the very end, add in two tablespoons of the homemade mayo. This is another recipe I will add to the list.

As for the seasoned oil, here is a simple way to prepare it. 1 ½ – 2 cups of EVOO and three tablespoons of the seasoning mix I wrote about earlier. Place this in a “glass” container and shake well. Whenever you need oil with flavor this is a handy condiment. I use it for baking, roasting (meats, chicken and fish) and for making dishes such as cold salads (potato, pasta and etc.)
