Oven Roasted Dinner:

Here is one of those opportunities where I used my seasoning mix and prepare an easy breezy meal on a cold winter eve.  I used the mix on both the chicken thighs and the Brussels sprouts.  Okay southerners take a break.  We are not making chicken salad and I really love the legs, wings and thighs of the chicken.  This also works with a split chicken but the baking time will be much longer.  I have a whole different story when it comes to roasting split and whole chicken.   But here are the steps for my oven roasted dinner:

  1. Wash the chicken and the sprouts.  I like to cut my sprouts in halves so the cooking time is less and these little guys are much easier to handle during the prep time and on the plate. This means you don’t have to fight with them to eat them.
  2. Line your sheets (you will need two cooking/cookie sheets) with parchment paper or a silicone lining. Sprinkle each sheet with EVOO and one teaspoon of coarse grinded sea salt.  On top of the EVOO and salt you will add the seasoning mix or your favorite seasoning.
  3. Place the chicken on one sheet and the sprouts on another.  Repeat the oil and seasoning mix but do not add additional salt.
  4. I cook the chicken on “quick bake” at 350 degrees for approximately an hour and the sprouts will cook at the same temp for 45 minutes.  The time and temperature will vary depending on your oven and whether or not you use the quick bake option.
