I decided to make a really cute treat for the ladies of my morning group.  I am a lover of easy breezy things to do.  These are just mini cheese cakes dressed up to look like Easter baskets.  I simple lined the cupcake pan with pastel colored liners and dropped a cookie in the bottom of each.  That is how you start this party.  Then I made a rich and creamy cheese cake mix using cream cheese, sour cream, butter and Greek yogurt alone with the usual suspects for favoring.  Pour as much or as little of the mix in each cake slot and place in the oven to bake.

While the little cakes are baking you are going to spend this time dying the coconut for the grass and measuring the licorice for the handles.  You may consider counting out the jelly beans if you want the baskets to look identical. I also made sure to purchase the mini jelly beans to top the grass.
Once the cakes are baked allow complete cooling before topping with the grass. If you have someone with gluten or wheat problems you will simply leave out the cookie before baking.  I discovered some gluten free products have corn, soy and other things I will not feed to others.  Believe me this will work with or without the cookies.  The richness of the filling will not be lost because there is no cookie or crust at the bottom.

BTW ~~~ This works for little ones as well as for the young at heart.  It also served as a portion control serving if you can eat just one, but I doubt it.
