Berries and Coconut Milk Smoothie:

Okay, here is a dessert for the dairy free people.  This is oh so easy to do and oh so good for the taste buds and for you.  Low in calories and cholesterol, this a tasty treat.  All you need is a NurtiBullet or a Ninja machine for the labor and everything else should be in the fridge, freezer or pantry. Although I titled this “berries…” you can use any frozen fruit.


First step in making mix berries smoothie


Slow start to churn the ice


1-     Frozen fruit of your choice

2-     1 cup of ice

3-     Coconut milk according to the machine you are using

4-     And for fun, a slice of ginger

5-     And honey (The honey is optional.)


Place the fruit, ice, coconut milk and ginger in the machine.  I learned from earlier mistakes that the honey goes in last. Otherwise, it will not fall into the mixture, because it is too cold and will have congealed.  Mix for 30 seconds or until the mixture becomes a smooth and creamy beverage.  Depending on the amount of ice and coconut milk, this can become a smoothie or a dish dessert.

I choose to use my Nutribullet and not the Ninja for this project.  I have not tried this with a regular blender and cannot tell you the outcome.  Another pointer, use the largest container on the NutriBullet to make your smoothie/dessert.
