I love grocery shopping, a task most people hate to do. This week there were avocados on sale at the market and I loaded up. Today I decided I wanted to snack but I needed to know what I was actually eating. When you purchase dips, spreads and dressings you never really know what’s in those containers. And if you do read the labels half of the ingredients are unpronounceable and you most likely have no clue to what these items are (without a dictionary or a degree in chemistry). So how about using heart and body healthy/happy things that do not leave you feeling yucky? Avocadoes have loads of healthy fats and to some’s surprise, avocado is a fruit.

I searched the internet and here are a few reasons to eat more avocados:

  1. Avocado is incredibly Nutritious

Here are some of the most abundant nutrients, in a single 3.5 ounce (100 gram) serving (3):

  • Vitamin K: 26% of the RDA.
  • Folate: 20% of the RDA.
  • Vitamin C: 17% of the RDA.
  • Potassium: 14% of the RDA.
  • Vitamin B5: 14% of the RDA.
  • Vitamin B6: 13% of the RDA.
  • Vitamin E: 10% of the RDA.
    • Then it contains small amounts of Magnesium, Manganese, Copper, Iron, Zinc, Phosphorous, Vitamin A, B1 (Thiamine), B2 (Riboflavin) and B3 (Niacin).

Not only are avocados healthy, they’re also incredibly delicious and go with all sorts of foods

You can add them to salads and various sorts of recipes, or you can simply scoop them out with a spoon and eat them plain.

They have a creamy, rich, fatty texture and blend well with various other ingredients.

Here is a dish that goes well with veggie, chips, crackers, and as a salad topping.

All purpose Avocado Spread/Dipping Sauce:

2 medium to large avocados

10-12 cherry/grape or mini sweet tomatoes

¼ cup bell pepper (I use red, yellow or orange peppers)

1 teaspoon lime juice

1 teaspoon apple cider vinegar

EVOO (enough to make it smooth and creamy)

1 teaspoon each salt and pepper

After cutting the avocados in half remove the pits and slice into cubes while still in the shell then empty into a bowl.  Cream the avocados with EVOO, the juice, vinegar, salt and pepper. Dice each tomato into six pieces (or smaller), dice the bell pepper into equal size pieces as the tomatoes.  Add the peppers and tomatoes to the avocados mix and stir until smooth and well mixed.  Place in the fridge until serving time.

Use EVOO according to your taste.  I use enough to make this smooth and creamy at the same time it is spreadable and dip able. Dipping raw veggies in this is such a treat and less torture to the body than a cheese or other dairy based dip.  I also use a rice cracker (made without corn or soy).  The only problem will be trying to stop eating.  This is easy, quick and so yummy. You can go nuts and eat this with chips.
