Rainy night one pan meal (or a holiday eve meal)

This is a one pan meal. It may not look like much or look tasty but the weather is rainy, windy and cool. So I lined a baking sheet with foil (you can use parchment) and sprinkled it with olive oil. This meal is frozen broccoli florets, and two small to medium size sweet potatoes. Scrub your potatoes and against all food rules I do rinse off the legs before cooking. Line all of the food on the top of the oil and sprinkle with seasonings and additional oil. Once all the main parts of the meal are covered with oil and seasoning, toss and spread out evenly. Place in a 350 degrees oven and cook until the chicken is completely done.

This is also a great meal to prepare on the eve of a holiday. Simple, hearty and easy clean up. Think of it as an easy, breezy meal for two or a large gathering. You can change the meat and veggies according to your taste.
