CHICKEN STOCK WITH RICE NOODLE SOUP VEGGIE (OR VEGAN) STYLE

Here is a quick and easy dinner which can be vegan or veggie.  Yesterday we went into the city so my buddy could have a medical procedure.  Because of my booboo the returned trip was an hour or so later than planned add that in with the medical procedure I came up with a light, quick and easy meal.  Here are all of the things you will need and I promise you will enjoy it.

 

HERE IS WHAT YOU WILL NEED TO PREPARE THIS QUICK AND EASY DISH:

1 BOX OF CHICKEN STOCK
MEDIUM SIZE BELL PEPPER
SEVERAL MUSHROOMS
¼ CUP OF FRESH CILANTRO
MRS. DASH TO TASTE
MSS TO TASTE
½ BOX RICE NOODLES (THE CELLOPHANE TYPE)
BLACK PEPPER AND SEA SALT TO TASTE

 

 

I used mushrooms, green bell peppers and cilantro for this meal but go for your favorites and make this according to your kitchen and taste.  Salt free/low sodium and low fat stock it what I used.  Once again it is all about the taste.

While washing and chopping the veggies in a large pot bring to boil the stock.  Once the stock start to boil toss in the veggies, MSS and the Mrs. Dash and return the pot to a boil.  Because I used the 32-ounce size package of stock I only used half a package of the rice noodles.  Place the noodles into the stock mixture allowing it to come to a boil again. Bring down the heat and simmer until the noodles are soften. Stir to assure the noodles are well seasoned and completely soften.  Turn off the heat.

 

This soup is so good when served in large bowls.    I picked up these soup bowls years ago in an oriental food market way down south.  How appropriate for the soup.

We added the salt and black pepper at the dinner table rather than while the soup was cooking If you want to make this vegan, use vegetable stock or water instead of a meat stock and it will still be a true tasty treat.

BTW — I will be using a car service again, especially for those long days and mad traffic trips into the city and we will probably be having this soup a lot sooner.
